1. We Didn't Understand How An Olive Oil Could Taste This Good
We used to buy olive oil at the store without giving it much thought. But the first time we tasted a fresh, early-harvest oil straight from a small farm, we were completely blown away by the flavor. It felt like tasting olive oil for the first time. That experience led us to learn more about olive oil, and why freshness, harvest timing, and sourcing all play a bigger role than we realized.

We make our olive oil using organic olives picked at the very start of the harvest, when flavor and nutrients are at their peak. The olives are cold-pressed without heat or additives, and bottled in dark glass to protect their freshness. What makes this olive oil different from what I can get in stores?
Oliva Dorado is made from early-harvest olives grown on our single family farm in Spain. The olives are cold-pressed within 3 hours of harvesting and bottled in dark glass to help protect flavor and nutrients. We focus on quality, freshness, and full traceability from harvest to bottle.
Does it actually taste better?
Yes. Because our olives are harvested early and pressed fresh, the oil has a brighter, more complex flavor. Overall, Oliva Dorado is a lighter olive oil with fruity, buttery notes and a clean, smooth finish. Once you try this kind of fresh, early-harvest extra virgin olive oil, it’s hard to go back to anything else.
Is it good for cooking or just drizzling?
You can absolutely cook with it. High-quality extra virgin olive oil like ours is a great everyday option. Because it is rich in polyphenols, it may be more stable when used with heat compared to lower-grade oils. It’s ideal for dipping, drizzling, salad dressings, marinades, sautéing, roasting, and even baking.
How long will it stay fresh?
Our olive oil is best enjoyed within 12 to 24 months of harvest. To help preserve its freshness, store it in a cool, dark place, away from heat, and always keep the cap tightly closed. We use dark glass bottles to help protect the oil from light and ship quickly after bottling. You’ll always receive oil from the most recent harvest. We’re currently shipping from our October 2024 harvest.

Oliva Dorado is produced on our organic-certified farm in the beautiful region of Zaragoza, Spain. It’s a place with a centuries-long tradition of making world-class olive oil. Every step happens on-site, from growing and harvesting the olives to cold-pressing and bottling in glass. Our mill is located right next to the trees, so the olives are pressed within three hours of harvest to preserve flavor and freshness. We produce in small batches to control quality, ensure transparency, and offer a single-origin, organic olive oil with full traceability from farm to bottle.
